Easy and SUPER TASTY - I highly recommend it for its healthiness, ease, and simplicity - an easy way to get a week's worth of lunch entree in one pan.

Could always sub some cooked beans instead of some of the lentil or barley, if desired.

I will definitely use a bit more carrots, more celery, and more broth. I used 4 cups vegetable stock and 2 cups chicken stock (since that is what I had on hand), and later ended up needing to add more stock/water, since I simmered the soup (accidentally) about an hour longer than necessary (and it was still perfectly GREAT). I had slightly less lentils than called for, so used 1-1/4 c lentils and 3/4 c barley, and it was FABULOUS.

I am 26 and I teach high school Spanish. I've always liked tinkering around with recipes to make something new and trying new foods. As a result, I am quite chubby. In any event, in my free time I like to read, cook, spend time with family and friends and travel.
