Easy and SUPER TASTY - I highly recommend it for its healthiness, ease, and simplicity - an easy way to get a week's worth of lunch entree in one pan.<br/><br/>Could always sub some cooked beans instead of some of the lentil or barley, if desired. <br/><br/>I will definitely use a bit more carrots, more celery, and more broth. I used 4 cups vegetable stock and 2 cups chicken stock (since that is what I had on hand), and later ended up needing to add more stock/water, since I simmered the soup (accidentally) about an hour longer than necessary (and it was still perfectly GREAT). I had slightly less lentils than called for, so used 1-1/4 c lentils and 3/4 c barley, and it was FABULOUS.
     
  2. This may be a great soup, but it is misleading to say it is Dr. Fuhrman's Eat to Live recipe. Eat to Live is a vegan based diet, no chicken stock and very little grains. I am sure it is a wonderful recipe, but you might want to change the name.
     
  3. This was very tasty considering it's just veggies, stock and Mrs. Dash for the seasonings. I cut it in half and it still made alot. I used the couscous but next time I think I'll do the barley -- love that stuff. Made for PAC Spring 2010.
     
  4. I haven't tried this recipe so really can't rate it, but have to say since the recipe calls for chicken broth it is not a Dr. Fuhrman Eat to LIve approved recipe! It should say vegetable broth -- it wouldn't need to be water to be vegan. There are plenty of tasty vegan vegetable broths out there.
     
  5. This sounds good, but how much water or stock should be added? I've made lentil soup in the crockpot and it turns out awesome. Diced red bell peppers are a great addition--they add a little color.
