Kicky and refreshing. Good on Chicken, fish, shellfish etc. Different taco salsa. Try it!
- 1⁄4 cup brown sugar, firmly packed
- 3 tablespoons white rum
- 2 tablespoons fresh lime juice
- 1 teaspoon serrano chili, seed and mince
- 4 cups pineapple chunks
- 1 cup mango, diced
- 1 cup star fruit, halved lengthwise and thinly sliced
- Combine first 3 ingredients in a large bowl; stir well.
- Add remaining ingredients; toss to coat.
- Chill at least 2 hours.
