  1. Saute onion in one short spray of cooking spray until just starts to soften. Add remaining ingredients except paprika and pepper, bring to a boil. Reduce heat to low and simmer covered for one hour or until vegetables are soft. When finished, add smoked paprika and black pepper to taste.
