Doubly Chocolate Cookies

• Yields: 48 cookies

ingredients

• 1 cup butter, softened
• 2 eggs
• 2 cups all-purpose flour
• 3⁄4 teaspoon baking soda
• 2 cups semi-sweet chocolate chips
• 1 1⁄2 cups sugar
• 2 teaspoons vanilla
• 2⁄3 cup unsweetened cocoa powder
• 1⁄4 teaspoon salt
• 1⁄2 cup pecans, chopped (optional)

directions

1. heat oven 350.
2. in large mixing bowl beat butter, sugar, eggs and vanilla until light and fluffy.
3. stir together flour, cocoa, bakiung soda, and salt; add to butter mixture.
4. stir in chocolate chips, and if desired, nuts.
5. drop bu rounded teaspoonfuls onto ungreased cookie sheets.
6. bake 8 to 10 minutes or jsut until set.
7. cool slightly; remove from cookie sheet to wire rack.
8. cool completely.
9. makes about 4 1/2 dozen cookies.

Made these pretty much as given, including the chopped pecans, which I toasted beforehand! Also frosted some of them with a not-terribly-sweet cream cheese frosting that I whipped up! Delicious both ways, no way around it, & I think I'll keep hold of the recipe for a while! Many thanks for sharing it! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef],
