This tomato bruschetta was really good -- I loved the idea of using both the roasted roma tomatoes and the sundried tomatoes as well. I scaled this recipe way back as it was only the two of us and we still have leftovers for another dish down the line. The only change I made was to add parmesan cheese vs. the mozzarella. Made for PRMR, October, 2013.
