A sweet, sticky pudding for the true coconut lover. Free of dairy, soy, nuts and wheat
- 2 cups sushi rice, uncooked
- 1 (13 1/2 ounce) can coconut milk
- 1 cup sugar
- 4 eggs
- 1 cup flaked coconut
- 8 kiwi fruits
- Cook rice according to the directions.
- Mix everything except the kiwi fruit
- Bake in a greased 8 X 8 baking dish at 350 for approximately 40 minutes.
- Serve with sliced kiwi.
