Double Choc-Chip Muffins

This is my favourite muffin recipe of all! I eat these muffins all the time and they are quick and easy to make.

• Total Time: 35 mins
• Prep Time: 15 mins
• Cook Time: 20 mins

Ingredients:

Serves: 12

Yield: 12.0 muffins

• 2 eggs
• ½ cup oil
• 1 cup milk
• 1 teaspoon vanilla
• 1 ¾ cups plain flour
• ½ cup sugar
• ¼ cup cocoa
• 1 tablespoon baking powder
• ½ teaspoon salt
• ½ cup semi-sweet chocolate chips
• extra chocolate chips , to sprinkle on top

Directions:

1. Preheat oven to 200 C and prepare muffin pan by greasing or fill with paper liners.
2. In large bowl mix the eggs, oil, milk and vanilla.
3. In smaller bowl mix the flour, sugar, cocoa, baking powder, salt and chocolate chips.
4. Combine wet and dry mixtures and fold together gently until just mixed.
5. Spoon into prepared pan and sprinkle choc chips of top of each. Bake at 200C for 20 minutes.
6. Remove from pan and cool on rack. These are nice sprinkled with extra chocolate chips on top of each muffin before baking.

Perfect muffin recipe for our family. I really like the fact that they are not overly sweet so you can enjoy the dark cocoa flavor (I used a dark Dutch cocoa). Baked up perfectly and I received 12 perfectly crowned muffins. Made for Zaar Cookbook Tag.

These were really gud! I wish they wud have been more sweeter though i did add extra 2 tbsps of sugar . Rich enuff and the texture was amazingly soft and moist. I baked it into a cake and added another 1/4 cup of choco chips on the top. The cake rose very well. Enjoyed it with a strong cup of tea. Wud definitely make again but with milk choco chips or with extra 1/4 cup sugar. Thanx a ton.

I made these today - great! I have never had success with muffins and thrilled to bits. Turned out just like the picture, tasted extra good, better than any bakery - thanks Pollywaffle!
