A nice cold weather soup. This is great for low carb diets.
- 4 tablespoons butter
- 1 onion, diced
- 1⁄2 cup celery, sliced
- 4 tablespoons flour
- 3 cups milk
- 1 cup shredded cheddar cheese
- 1 cup gouda cheese, shredded
- salt, pepper
- 5 drops hot sauce
- chives (to garnish)
- Melt butter in saucepan.
- Add onion and celery, stir to soften.
- Add flour, to thicken.
- Slowly whisk in milk until smooth.
- Bring to a simmer.
- Add cheeses stirring until blended.
- Add salt& pepper to taste and garnish with chives.
This was so easy to prepare and had a wonderful flavor. The only thing I did different was I used white pepper and doubled the hot sauce. It made a good entree, but could certainly be a wonderful starter, good enough for guests! Thanks Chia for sharing!
I loved this recipe. Couldn't believe how easy it was to make (even for a novice like me). Made it for the wife along with some salad, with hot caramel apples for dessert. Best meal I've made in a long while that was this good and also healthy.
I used smoked gouda and also at least doubled the hot sauce. After tasting, I thought the soup still lacked something so added some chicken bouillon granules. I added some homemade croutons when serving. Very nice soup for a cold night. Thanks for sharing.
