I used instant pancake mix as a shortcut and liked the results. Dropping a few (4 blueberries and 1/2 raspberry) berries on top AFTER I poured the mix onto the griddle was a good tip. It kept the berries for leaking all over and sticking to the pan.

This made a delightful and filling supper tonight. I often do breakfast for supper and this fit the bill nicely. I love the addition of the berries. I used red and black. :-) Made for ZaarStars.

What light, fluffy and delightful pancakes! I used chopped strawberries instead of raspberries, otherwise made as specified. The extra step of whipping the egg whites was worth it as the result was airy and delicious pancakes. Thanks for posting this recipe!

I have written many good reviews on Zaar for pancakes, but this one is really fabulous! I made exactly as directed, adding only slightly more buttermilk to thin to our desired likeness. Very tender and extra fluffy! I love the addition of the double berry combination! Thank you, Lorrie : )

OMG. these are simply incredible wonderful pancakes. I had to use frozen strawberry slices instead of raspberries but they were fine, i put them in the batter bc they were frozen b4 folding. fresh blueberries on top. so light, so fresh and so good.

These are excellant, what a great recipe Lorrie. The pancakes puffed up beautifully, they are light, tender and fluffy, with delicious sweet & tart raspberries and blueberries. I used fresh fruit in the buttermilk pancakes. Sprinkled on some icing sugar and we were good to go. Perfect...simply perfect. I will be making these often, into my keeper box these go. Thanks for sharing.
