Dorito Taco Salad

ingredients
- 1 lb ground beef
- 1 cup chopped lettuce (more or less to your liking, I love lettuce and always add more)
- 1 cup chopped tomato (more or less to your liking, I love tomatoes and always add more)
- 1 cup cheddar cheese (more or less to your liking, I love cheese and always add more)
- 1 finely chopped red onion
- 1 (1 1/4 ounce) package taco seasoning (I use El Paso, but any will do)
- 1 (15 ounce) can ranch style beans (you cant get these everywhere, so you can also use any brand of chilli beans)
- 1 (16 ounce) bottle Catalina dressing
- 1 (12 1/2 ounce) bag Doritos
directions
- Fry ground beef and add taco seasoning.
- Mix ground beef and ALL ingredients, except Doritos (unless you don't mind soggy), in a large bowl.
- Refrigerate.
- Mix in Doritos and enjoy!
- Note: I enjoy this nice and cold from the fridge, but you may prefer it warm or room temperature.

This is almost exactly the same recipe I use - only difference is that I mix 1 c. Catalina with 1 c. medium salsa for the dressing - give a bit more "zip". Great recipe and it is always a hit at a potluck - just bring the chips and dressing separate and mix it up right before serving time. Thanks for posting this!

So easy & good! I used a lot more lettuce, mixed the ranch style beans and beef together, and topped it with sharp cheddar, onions, and tomatoes. I drizzled the dressing on top of the salad after it was on the plates to avoid using too much. We didn't even use half the bottle and had plenty on the salad. Thanks!

I was given this recipe by a friend, more than 30 years ago, with the exception being that we don't put any ground beef in it, and it is just as tasty. We use drained, rinsed pinto beans instead of the chili beans, and we add a little fresh cilantro and chopped green onion. You can use any flavor Doritos, but don't substitute plain tortilla chips---the flavor just isn't as good. You can even use fat-free Catalina dressing---it tastes the same to us. I don't add the dressing and chips until it is served, that way everything is fresh and crisp.

I LOVE this site and there are SO many helpful recipes here! I am in the process of trying to convert all of my recipes from caned/boxed stuff into made from scratch recipes. And this site is my STAPLE for doing so! Im just trying to make everything more healthy for my family and I. We eat about 95% organic food. So the problem with buying even canned organic foods, is that they still tend to contain somethings like "yeast extract" which is just another form of MSG. Also, I would like to add that I am not a doctor (alot of people see the dr_kaley and think so), but I AM currently working toward my Master Herbalist degree. I do alot with herbs and the only medicines we use, are herbal. I even make alot of my own herbal medicines.
