This is another casserole I make for my Jimmy boy. I sometimes use salmon or tuna in place of the poultry and omit the chicken broth.

Ingredients Nutrition

  • 1 cup boiled cooked chicken, chopped
  • 12 cup cooked brown rice
  • 12 cup boiled mixed vegetables
  • 3 -4 tablespoons unsalted chicken stock

Directions

  1. Mix all ingredients together.
  2. Serve at room temperature.
  3. Store extras in sealed container in the fridge.
  4. Discard extras after 3 days.
