This is another casserole I make for my Jimmy boy. I sometimes use salmon or tuna in place of the poultry and omit the chicken broth.
- 1 cup boiled cooked chicken, chopped
- 1⁄2 cup cooked brown rice
- 1⁄2 cup boiled mixed vegetables
- 3 -4 tablespoons unsalted chicken stock
- Mix all ingredients together.
- Serve at room temperature.
- Store extras in sealed container in the fridge.
- Discard extras after 3 days.
