My mother makes the best divinity. I think she got the recipe from her mother.

Ingredients Nutrition

Directions

  1. Cook the vinegar, sugar, syrup, and water to a thread stage.
  2. Beat the egg whites.
  3. Pour the cooked mixture over the egg whites.
  4. Beat it.
  5. Add nuts.
  6. Drop by spoonfuls on waxed paper.
  7. NOTES: Humidity will affect your divinity so don't cook if it's raining outside.

This recipe worked great for me. I added about 1/2 t vanilla and 1/4 t almond flavoring and it was excellent. I have found in the past that two things affect the end result of divinity, humidity and the egg whites. Fresh eggs will not work. One MUST use eggs that are a few days old. I don't know what the vinegar does but this is a very good recipe. Oh yes, you MUST cook the syrup until it spins a thread and then slowly pour it into the egg whites while beating continuously. Beat until the candy loses its gloss. Must work fast to spoon it unto the waxed paper. Hope this helps.

This recipe didn't work well at all for me.As much as I hate to give a low rating, I feel I need to be honest. I wish I would've researched more divinity recipes before I made it. In no other instance can I find where you pour the cooked sugar mixture over the egg whites. All others say "pour a steady stream" Made as instructed .. the divinity didn't come out smooth as it usually does for me.It has little *bits* in it?? Is it the egg cooked or something? Also, I'm glad I have cooked divinity before , otherwise I would have had no clue what "a thread stage" was. Using the teaspoon method, and they weren't heaping by any means, I got 20 pieces of candy. Again, very sorry for the low rating, but it just didn't work for me.

5 stars x 2, 5 stars x 3. You are right. Your mom makes the best Divinity. Absolutely Heavenly. I never made divinity like this before. Very easy, quick and above all delish. I just hope there is enough left for Christmas. You think I'm jokin? Thanks for sharing.
