Diphaphata (Stove Top Muffins)

"This recipe is from "Extending the Table: Recipes and Stories from Argentina to Zambia". This particular recipe is from Botswana. Typically diphaphata (pronounced dee-pah-PAH-tah) is made with yeast, but this baking powder method is also common. I really liked the taste of these muffins. They taste like a cross between biscuits, English muffins, and a chewy bread. The recipe is presented as written in the cookbook, with my (notes) after having made a batch."

  • Knead everything together to a rollable dough. (The dough will be very stiff. You might have to add some more liquid to get your dough to come together. I ended up using 2/3 cup milk for a half batch.).
  • Flatten with hands or rolling pin. (Get the rolling pin. I'm telling you this stuff is STIFF!).
  • Cut into 3-4 inch circles. (No, it doesn't say how flat to roll it. I made mine about 1/4 " thick. You don't want it to be too thick, or the center won't get cooked.).
  • Place heavy frypan over low heat. (I ended up having to turn mine up to medium, medium low.) Sprinkle with flour or spray with cooking spray to keep dough from sticking. Place bread circles in pan and brown on both sides, about 10 minutes each side. (Once I got the temperature right, this was accurate, but on low the circles weren't browning at all even after almost 30 minutes. I was able to get all 5 that I cut from a half batch into my pan at once, and they do not puff sideways, so it is okay to put them right next to each other.).
  • These muffins puffed up to nearly 4 times their original height, with a dense chewy interior. It's a very plainly flavored bread, but it was good.

  1. they didn't all quite fit in the pan at once . . .the first batch (while very yummy!) didn't rize at all. The last 2 which I had to let sit for a while rose much better.
     
  2. These were really good, and so easy. I made a half batch, used milk and added about 2tbsp water to make the dough form. I rolled to 1/4" and used my biscuit cutter...I got eight rounds, which happily all fit in my skillet. I also cooked on med/med low, and had to spray the pan a second time with Pam when I flipped the rounds. Tasted great hot with butter, and tasted great cold later with peanut butter! So fast, I'm sure I'll be making these again and again. Next time, I'll try freezing some.

I'm a stay at home mom with two lovely children, a wonderful husband, and 2 hungry roommates. I'm an artist by avocation, and am working to being one by vocation as well. * grins * Just to let everyone know, after a half hour discussion about it, the boys (DH and Roommate) have settled on ratings meanings. I reserve the right to bump up or down a half star a recipe based on the actual recipe and how easy it was, etc. etc. I have to admit, it's been a couple of years since I updated this text and in the meantime, my picky picky DD has flowered into a girl who enjoys California rolls, will give almost everything a try, and in general much less picky than the average 7 year old in this area. DS, at 2 and a half, asks for salad for lunch and then demolishes it. He's a weirdo. :) We try to be very honest and very descriptive with our reviews. And I fully appreciate the same from people reviewing my recipes. Not every family will like every recipe, and sometimes what you didn't like about a recipe, another family will love! :) I also try to be as nice and polite as possible in my reviews. I don't believe there is any reason not to. The only thing that really upsets me enough to be mean is when a poorly written recipe forces me to have to clean my kitchen. ***** - "Scout is not allowed to make this very often because it is highly addictive and will be inhaled on sight!" Dump Cakes, Sweet Salsa Chicken and Wasabi Peanuts are in this category. **** - "This is wonderful and we want to see it again fairly often, a new family favorite." *** - "This is good. We woud eat it again without any changes, but it's not our favorite." ** - "We did not like this very much, but we would eat it again if served it. It would be good if some changes were made.
