This is a very good bread with most anything, especially a soup in the cold winter. My granddaughter loves too. It makes great toast.

  1. In a large mixing bowl combine 1 cup flour, sugar, onion, dill, salt, baking soda, and yeast; blend well.
  2. In a saucepan heat the cottage cheese, water, and butter until quite warm (about 120 degrees); add this to flour mixture; mix well.
  3. Add the egg and blend at low speed until moistened; then beat 3 minutes at medium speed.
  4. Stir in remaining flour, a little at a time, only enough to form a stiff batter.
  5. Cover with plastic wrap; place in a warm place; let rise till doubled in size--about 45-60 minutes.
  6. Stir down and place in greased casserole.
  7. Cover; let rise till double--about 30-45 minutes.
  8. Bake in 350 degree oven for 30-40 minutes.
  9. Immediately remove to a rack and cover with a clean dish towel for about 15 minutes.

This is practically identical to the recipe I got from my mother, who got it from a friend of my sister. We all love it and have made it many times.

Delicious! Easy to make and everyone that tastes it wants the recipe. In the mixing directions, the egg is not mentioned so I added it after adding the cottage cheese mixture to the dry ingredients just before beating the three minutes.

I have been making this bread for years. I got the recipe from my Grandmother and it has been a family favorite for as long as I can remember. I brush the top with butter as soon as it comes out of the oven and sprinkle with kosher salt. I can never find cream style cottage cheese so I substitute large or small curd with equal success. Dill weed and dill seed can also be used interchangeably. I usually use dill weed when I know little children will be eating it as they seem to turn up their noses to seeds in bread. This is a great bread to try for those who have never made a yeast bread--it is simple to make and yields great results. I would encourage everyone to try this!! Thanks for posting Mimi!
