Dill Sweet Potato Salad

My family asks me to make this every chance I get. It is a nice change from the usual potato salad with mayonnaise.

Ingredients Nutrition

  • 2 large japanese sweet potatoes
  • 1 large cucumber
  • 5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
  • 23 cup coconut vinegar (decrease amount if using white vinegar) or 23 cup other vinegar (decrease amount if using white vinegar)
  • 14 cup chopped fresh dill (or more)
  • salt and black pepper

Directions

  1. Cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
  2. White they cool a bit, dice the cucumber and combine with the rest of the ingredients.
  3. Add in cooled sweet potatoes and stir well.
  4. Taste for salt and pepper and chill or serve room temperature.
