Dill Sweet Potato Salad

  • 2 large japanese sweet potatoes
  • 1 large cucumber
  • 5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
  • 23 cup coconut vinegar (decrease amount if using white vinegar) or 2/3 cup other vinegar (decrease amount if using white vinegar)
  • 14 cup chopped fresh dill (or more)
  • salt and black pepper

  • Cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
  • White they cool a bit, dice the cucumber and combine with the rest of the ingredients.
  • Add in cooled sweet potatoes and stir well.
  • Taste for salt and pepper and chill or serve room temperature.
