We LOVE these little babies! This has been my husband's favorite appy for years. Every Superbowl, every New Year's Eve, and many other occasions, these are always on our menu. I use soft cream cheese, and it helps to dry the ham off with paper towels for easier spreading. Then I always use the refrigerated Claussen dill pickles. OH YUMMY! I think I better make them soon!

I turned this into a dip we serve with firm crackers like wheat thins. Chop 1/2 lb dried beef, from deli only, add 8oz sofftened cream cheese and 3/4 cup or so of sour cream. Stir in chopped baby dill pickles. I keep adding the pickles until I get the amount my family likes which is lots. Tasty and easier than doing the rollups!

I LOVE these! I first had these in high school and was forced to try them. It sounds like a weird combo but yummy! I can't make a plate unless I have somewhere to take them or I will eat them all myself. I usually use ham and baby dill pickles. I usually make sure my cream cheese is room temp so it spreads easier. I've also used cream cheese spread with success. It spread easier and didn't rip the ham. I usually cut a bunch of tooth picks in half and use them to hold the end flap of ham in place plus it's a little handle for easier grabbing!

I'm not a pickle fan myself, but we love making these for appetizer parties because they're so easy, inexpensive, and people go crazy for them! We tried making them exactly as specified with the recipe first and another time using whole baby dill pickles (no slicing) and both methods went over very well with the crowds. Thanks so much!

Oh my goodness. How can something so simple be so delicious?!? I just had these at a Super Bowl Party. A brawl nearly broke out over the last few! This is being put into my favorite appetizer file, and will be used frequently!

Followed recipe to the T. Made with Ham. I dont like pickles but I have to say these were really good! Different but good! I made them to take to a party and they were a hit! Very easy! Thanks!

I've made these in the past and they were delicious! We quartered or halved the dill pickle (depending on it's size) and mixed some garlic powder/granules and dill into the cream cheese before spreadng it onto the meat.
