Dijon-Roasted Potatoes (Weight Watchers)

"Found this recipe on the Weight Watchers website. It is a core recipe but can become flex by counting the points. I think these potatoes have a lot of flavor and are a great side dish. Even kids and husbands will enjoy! It's easy too! I also double the ingredients and use 6-8 potatoes to get a good amount out of this."

  • As mentioned in the description, I usually double all the ingredients and use about 6 or so potatoes (depending on size). What I am looking for is to have enough coating of the ingredients to cover the potatoes and give them the full flavor. Please adjust the amount of potatoes to suit your tastes!
  • Preheat oven to 425°F.
  • Coat a 9 x 13-inch baking dish or a cookie sheet with cooking spray.
  • Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl.
  • Chop up potatoes and add them to the bowl with the whisked ingredients. Stir to coat the potatoes.
  • Transfer potatoes to the baking dish or cookie sheet and roast for about 15 minutes. Stir and continue to roast 15 minutes more.
  • What I do is roast the potatoes until they are pretty browned and toasted. I check to see if they are cooked through by piercing them with a fork. If the fork is not going through easily, they need more time. I will also add a piece of Aluminum Foil to the top of the potatoes, turn the oven down to 400 F and continue to roast. The foil will allow the potatoes to get tender in the inside and cook all the way through without burning them.
  • Take out of the oven and cool slightly so that you don't burn your mouth when eating! Also good with some ketchup added to the side!

  1. Very nice flavor, and easy... although my potatoes took quite a bit longer than the stated time to get tender. I also doubled the seasonings, which I agree is the smart choice as it really boosted the flavor. :) Thanks for a great addition to my collection!
     
  2. These were very good! I seasoned the wedges very well with extra seasonings and added onion and garlic powders. Dipped them down in ketchup and they were perfect! I made these with WW Barbecue Meatloaf and they paired great together. Made up a salad on the side and you have a full complete meal for not many points at all. (4 points a sev. for these and 4 points a serv. for the meatloaf) I only cut up 3 large potatoes and it was plenty for the two of us. Thanks for pointing out this great WW recipe. While on WW Im sure I will make again.
     
  3. This is a nice change from oven fries. The sauce was really thick so I did add about one teaspoon of water. Then I used my pastry brush to just brush over the potatoes. It worked for me. Thanks for posting!
     
  4. These were so easy to prepare and perfectly delicious. While preparing these, I was a bit concerned about the amount of paprika and felt it would overwhelm the other flavors but that was not the case. The flavors were clean and simple and worked so nicely with the creaminess of my golden Yukon gold potatoes. Served this with pork tenderloin and steamed broccoli. Thanks!
     
  5. I'm always looking for new ways to make potatoes. These turned out nicely. I used fingerling potatoes which made for easy wedges.

I like to collect recipes! I also like to cook, and bake. I just got married in 2006, so I have been experimenting will all kinds of new recipes. I love reading cookbooks cover to cover. I don't have a favorite cookbook, although I do LOVE all the Death By Chocolate ones. I enjoy reading and belong to a book club where I get to take all the wonderful recipes I try out from this site! I also play the flute at the Cathedral and give lessons. Knitting keeps me busy and I make cookie trays and cakes on the side. I love to travel and try new foods too....too bad I have to work though, which limits my traveling abilities. Some good books I recommend are: Fast Food Nation The Glass Castle Memoires of a Geisha The Red Tent Middlesex I love techno music, classical, old Italian records, Dean Martin, Frank Sinatra, and old fashioned romantic French music, U2, Bruce Springsteen, and Jean Pierre Rampal are some more favorits. I enjoy listening to music while I bake and cook especially the cd from the movie Something's Gotta Give and Handel Flute Concertos.
