Dijon Honey Mustard Roasted Potatoes

I got bored with the stock-in-trade baked or mashed potatoes and decided to experiment and came up with this. I think this might also work as a cold potato salad.

Ingredients Nutrition

  • 6 medium red potatoes, chopped into bite-size pieces
  • 1 clove garlic, peeled and minced fine
  • 14 cup Dijon mustard
  • 3 tablespoons honey


  1. Place potatoes in a bowl.
  2. Mix the garlic, mustard, and honey together and pour over potatoes and stir to coat Put into a shallow baking dish and bake at 400 F until fork tender (about 15 minutes).

This recipe was really good! My hubby Loved it! I ended up adding some water part way through do they wouldn't be too dry, and then a tbsp of margarine. I also added salt and pepper. Thanks for a great recipe!
