This is a simple, economical dish, which can be a OAMC meal.

Directions

  1. To make this a OAMC recipe, place chicken into a gallon freezer bag.
  2. Stir together mustard, lemon juice, pepper and garlic.
  3. Pour mixture into freezer bag with chicken, remove as much air as possible. Squeeze chicken and dijon sauce until chicken is evenly coated.
  4. Seal, label, and freeze.
  5. If preparing to serve right away, marinade several hours in fridge, then follow directions below.
  6. Thaw, pour out marinade and discard.
  7. Arrange chicken in a single layer in desired dish.
  8. Bake at 375 uncovered for 25 minutes, or until cooked.

  10. Place chicken, thicker pieces towards outside, in baking dish. Cover with wax paper and cook on high 3-4 minutes. Give dish a 1/2 turn, recover, and cook on high 3-4 more minutes, or until chicken is done.

We all thought this turned out a bit bland. I marinated it for about 4 hours. I also cooked it in the microwave (in a round casserole for 8 minutes - did not rotate because our microwave had a turntable). I do not think I would make this again because I have other OAMC marinade-type recipes to try.

Had 2 EXTREMELY large boneless/skinless chicken breasts from Costco. Prepared marinade as posted -- which didn't look like enough liquid to coat the meat -- but did. (For more chicken, you may need to increase the marinade amounts) I placed the almost thawed breasts in the zipper bag and allowed to remain in (cool) room temperature for about 1 hour, to completely thaw. Baked for about 30 min -- due to size. They were so tender and tasty but too much for 1 meal. I have almost 1 entire breast to use in salad for lunch. Thanks Stacy, for an easy new prep.

This was fantastic! I put the chicken in to marinate when I went home at lunch, then at dinner baked it and served it over rice. It was so simple, but so delicious. The lemon juice really made it special. Thanks!
