Diet Low-Cal Low-Fat Super Salad Dressing

"This is my favorite salad dressing. It feels to me like I am having a rich wonderful dressing. Doesn't taste at all like it's "diet" dressing, which I usually hate. This is more of a creamy ranch like consistency rather than a watery, vinegar based diet monstrosity. Try this, you will like it! Especially considering it is like 10 calories for 2 Tablespoons!"

  • Put the 2 tablespoons of Fat Free Mayo and the mustard into a container and blend with a fork. Add 2 tablespoons of water and blend again.
  • It may seem runny at first, but just stir a little more -- the mayo, since it is fat-free, will emulsify with water instead of oil! Add more or less mustard, water or mayo until you get a consistency and flavor you like. You can certainly also make a bigger batch. I use more like 6T of mayo, 3 tsp of mustard and add water in increments until it is runny enough.

My what a difference a good stove makes!! When I was young, I LOVED to cook. Then I got married, got my first little house, and suddenly none of my dishes would turn out right! For years I simply thought I had lost my touch. Then, thankfully, I got a new stove. It had been my stove all the while! (Burning the bottom of my cookies, leaving inside still doughy, etc.) As for my "day" job, I am a law school graduate and stay at home Mom. I am currently awaiting my results from the Calfornia State Bar Exam. If I pass (fingers crossed), I will officially be an attorney. UPDATE: I am on a serious diet! Looking for great low low low cal recipes. All this cooking has lead to a 35 lb weight increase! I have already lost 7 and have 28 more to go.
