- 29.58 ml vegetable oil
- 907.18 g boneless skinless chicken breasts or 907.18 g chicken thighs
- 2 garlic cloves, minced
- 4.92 ml chili powder
- 4.92 ml cumin
- 2 medium onions, chopped
- 2 green peppers, chopped
- 3 carrots, chopped
- 14.78 ml chili powder
- 14.78 ml cumin
- 793.78 g can diced tomatoes, undrained
- 396.89 g can tomato sauce
- 396.89 g can seasoned tomatoes and green chilies (RO*TEL brand CHILI FIXIN'S version)
- 4.92 ml salt
- 2.46 ml pepper
- 29.58 ml brown sugar
directions
- In a large Dutch oven, brown chicken in oil, along with garlic and 1 teaspoon each of chili powder and cumin.
- Remove chicken and cube/shred when cool.
- Sauté vegetables (onions, peppers and carrots) with remaining amount of chili powder and cumin until they are soft.
- Add the rest of the ingredients and simmer covered for 3 hours. Serve over cornbread or cooked rice.
