I'm not sure why the name of this recipe includes "Diabetic", but I do know these are very good.
- Sift flour and salt together; set aside. Beat eggs and skim milk; add to flour.
- Beat until smooth.
- Pour into heated greased muffin tins, filling half full or less. Bake 375 degrees for 50 minutes, or until popovers are golden brown and sound hollow.
- Do not open oven for first 40 minutes.
To "Why is this a diabetic recipe" - might be that there is 0.1g of sugar per serving :) which for a diabetic is a result Will have to try this one soon. Being a Brit - not sure what a popover is - but it sounds fun.
I think the diabetic comes from being low-fat. My regular popover recipe had melted butter in it. Sigh. It's not enough to take away our sugar, but now they take away our fun fat. heart disease is a risk factor associated with diabetes, so we have to watch our cholesterol.
