I made this for my boyfriend who is a type 1 diabetic. I only used a sugar substitute so he could enjoy more of the dessert. He LOVED it and I was so happy at how easy it was to make. I had never worked with phillo dough and was a bit worried, but it was really fun. I have made this with other fruits and this has always been a huge hit with my friends. Definately one recipe to try!

I made as 4 servings and it was absolutely devoured and thoroughly enjoyed by the diabetic tasters and non-diabetics equally. A definate keeper. Made for Bake-A-Thon for Cool Monday.

This was so delicious, we enjoyed it very much. What great easy instructions. It was quick and very easy to make. The flavor of the strudel was out of this world. Its amazing what treats a few simple ingredients will create. The pears were tender and very tasty, while the pastry was light and crispy. I used the butter option instead of the spray. I will be making this again and again, it will be easy to vary with different fruit.

Diabetic Pear Strudel
