I baked these cookie's tot my Father. He is Diabetic and will think they are great! There wad a Taste Test ; conclusion: They melt in your mouth! Taste like Peanut Butter cookies. Tum.
Loved these! There is absolutely nothing not to love about these as they taste great, have perfect texture, look good and are quick and easy to make. I made as written and not only did we enjoy them by a diabetic co-worker who also enjoyed them was tickled to death to have the recipe. Thanks so much for the post, I will be making these often.
These went down like a lead balloon. They taste blah and the texture is blah in your mouth. I would rather have no cookies than these cookies. I have tried this type of recipe before and they were bad so I don't know what I was thinking LOL!
Did not much like. The first batch burnt like crazy on the bottom and were completely undone in the center. The second batch baked ok (at half the listed time), but not a great cookie, overall.

I made these for my Dad who is diabetic so that he could have a few cookies with the rest of us at Christmas. He really liked them and I will definitely make them again. I didn't have any parchment paper, so I just sprayed the cookie sheet generously with non-stick cooking spray and these turned out great. The cookies are a little delicate, so I needed to be careful with them after baking. Thanks so much for sharing this recipe so that Dad could have Christmas cookies!
My DH picked this special recipe for his coworkers who are diabetic. They turned out to be a big hit with everybody. A nice cookie that everybody loved. He has already been asked to make them again for next weeks offfice party. Thanks Jacquelyn for posting this recipe.
Thanks for posting this Jacquelyn! I make these with Natural peanut butter and Splenda for baking and they really take care of the craving for something sweet and they are low carb too. SA ;)
