  1. Very nice! I read this a couple of nights ago while looking for a good diabetic dessert for my mom. I knew of banana pudding, but really needed to know a good order to layer it. This worked out really nicely! I used ff/sf chocolate pudding, because she LOVES chocolate (I come by it naturally!) and I added a few wafers to the top for a little extra since she's used to a MUCH heavier dessert. This fit the bill perfectly and left her not feeling guilty about "indulging". Thanks!

  2. Yum... My first recipe made for Pick A Chef this round and it was fabulous! I don't know why I had never thought of doing this..(I mean, I know it is a traditional pudding and I have had it before but have never attempted to make it!) I used instant pudding instead of cook and serve and used banana pudding as I was out of vanilla. Very good taste and was enjoyed by all!

Tweaks

  1. I never make my banana pudding with pudding mix. I make real old fashion banana pudding because it is made from scratch. Nothing instant. All fresh ingredients, just like my great grandma made it with milk, sugar, eggs, and flour. This is the same mixture used to make home made ice cream. I use low glycemic sugar because I am insulin resistant. I'm not a diabetic but it could turn into diabetes if I don't eat right. That pudding mix is just nasty to me.
