I am not rating this as to whether suitable for a diabetic or not . I am giving this cake 5 stars as it is easy to do and delicious. I made it in the form of a slice using only sultanas and it is a great cake, low in fat and sugar. It is so moist too from the puree. We have all loved it for morning tea - so much so I should have made double !!!!
there is no such thing as a diabetic Christmas Cake. Adding apple juice concentrate is no better than using sugar. It is an instant fast acting sugar. The sultanas,, rasiens, pumpkin puree, white flour are no better. My husband and daughter both have diabetes. Please do your homework before passing on false hopes. Best solution...on occasion, have a small piece and do a little more insulin
Followed your recipe in detail to see how it would be, & I wasn't disappointed ~ YOUR FRUITCAKE IS WONDERFUL! Of course, that, coming from someone who really enjoys fruitcake, might seem biased, but I sometimes think this kind of cake gets a raw deal a lot of the time! Anyway, I liked that it's diabetic (& so will some of my friends!), AND that is includes pumpkin & wholemeal flour, all of which gives it a wonderfully unique taste! Thanks for sharing your recipe!
