Diabetes-Friendly Penne Boscaiola

- 375 dry penne pasta (dried wholemeal)
- cooking spray (olive oil specified)
- 125 g ham (leg 97% fat-free shaved)
- 4 green onions (thinly sliced)
- 400 g button mushrooms (thinly sliced)
- 3 garlic cloves (minced)
- 59.14 ml dry white wine
- 118.29 ml light cream (for cooking)
- 185 ml evaporated milk (light creamy)
- 118.29 ml chicken stock (salt reduced)
- 14.79 ml cornflour
- 118.29 ml parsley (flat-leaf leaves chopped)
directions
- Cook pasta in a large saucepan of boiling, salted water following packet directions, until tender and then drain.
- Meanwhile, spray a large, deep non-stick frying-pan with oil and place over a medium-high heat and add the ham and cook stirring occasionally for 2 minutes or until golden and then add onion, mushroom and garlic and cook, stirring for 3 to 4 minutes or until mushrooms have softened.
- Add wine and cook for 2 minutes or until wine has reduced by half and then add cream, milk and chicken stock and bring to the boil.
- Reduce heat to medium and simmer for 2 to 3 minutes or until sauce has slightly reduced.
- Place cornflour and 3 teaspoons cold water in a bowl and stir until smooth and then add cornflour mix to cream mix and cook, stirring, for 3 to 5 minutes or until thickened.
- Season with salt and pepper and add pasta and parsley, toss to combine and then serve.

This ended up being a quick and satisfying dinner. As it happens, I had some leftover rigatoni in a marinara sauce, which I used as the pasta. I also had a ham I needed to use, so chopped that up into small dice instead of using the shaved. So the dish had a pinkish tinge to it, but the flavors all worked together very well indeed. Even Mr Grumpy ate it all up, after pulling a face when I brought in dinner!

For the low fat and almost no sugars this is amazing. It's very hearty and filling and had great flavors and texture. It's also super easy, the sauce is made and waiting for the pasta to finish cooking. This is easily a "go to" dish if you have ham in the fridge. The whole family should enjoy it a lot.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
