First of all have to say this curry is aptly named. Could not get habaneros chillies so used jalapenos which may have been a mistake as once deseeded I felt they tasted more like capsicum with kick rather than chillies so left the seeds in the soaked chillies and added to birds eye chillies with seeds (the DH was wanting a very hot kick to help sweat his flue off) and overall it succeeded in that. The other issue I had was after simmering the potatoes (I used Carisma a low GI potato) with lid on they were still a little too firm so simmered with the lid off for a further 5 minutes but then felt the sauce was way too watery so thickened with a corn flour/cornstarch slurry (would suggest simmering with lid off if you prefer a thicker sauce). The Dh did enjoy but would have enjoyed better if the cabbage was shredded instead of cut into squares, personal taste, also I could not get a nappa cabbage and used a savoy. Thank you rpgaymer for a recipe that the DH has asked to be repeated but with tweaks to suit our taste and supplies.
