I'm not usually one for cooking meat in the microwave but this sauce is delish and the recipe is great for those nights when you need dinner in a hurry. Have also used loin chops for this which turned out quite well too.
- 4 lamb chops, chump chops
- 2 tablespoons fruit chutney
- 1 teaspoon curry powder
- 1 tablespoon brown sugar
- 2 teaspoons soy sauce
- 1 teaspoon vinegar
- Remove fat from chops and place in a single layer in a shallow dish.
- Combine remaining ingredients and pour over lamb.
- Cook for 5 minutes on high or until chops are tender.
These tasted very good, but we had trouble figuring out how long to cook them, as no weights are given in the recipe! We ended up overcooking them, but they were still quite yummy. We don't have chump chops here, so we used blade steaks. We ended up cooking 4 good-sized blade steaks for 16 minutes; some were over-cooked, some were undercooked, and some were a little of each. I definitely loved the flavors, though, so maybe I'll try baking it next time. I'm not used to cooking meat in the microwave! Thanks so much for posting, Mandy from Oz!
This is the first time I have used the microwave for anything other than reheating or doing potatoes. I used 10 Lamb Loin Chops (625 gram weight after cutting off fat + 100 gram of meat strips). Doubled all the ingredients (except brown sugar) and spooned over the chops (looks like mini t/bones) which were placed around the edge of shallow dish with the strips in the middle. Cooked for 8 minutes on high in a 900W convection/microwave on microwave - perfection cooked through and tender and so sweet. Served with mashed potatoe and steamed vegetables. A definate keeper, thank you Mandy from Oz - made for 123 Hit Wonders.
Wow, this was a delightful~easy~delicious dish, that surprised us. I followed this recipe completely, just added a bit of S&P when served. I did brown mine in a pan, because I needed some "au jus" for carrots that were served with the lamb. Thanks, will keep this and serve again~
