Delicious Zucchini Bread With Superb Lemon Butter

This recipe has been in my family for generations. I make this for breakfast every Sunday morning. It's easy and fun to make. VERY DELICIOUS!

  1. Preheat oven to 350°F.
  2. In a large bowl beat together eggs, oil, sugar, and vanilla.
  3. Slowly add zucchini.
  4. Add lemon zest and mix thoroughly.
  5. In a separate large bowl combine flour, baking soda, baking powder, salt, and cinnamon.
  6. Slowly and zucchini mixture until completely combined.
  7. Divide batter into two greased loaf pans. Bake for 1 hour and 15 minutes or until toothpick comes out clean.
  8. Serve very warm, so that when you put on lemon honey butter it melts.

This is easy and tastes great. The recipe calls for 1 teaspoon of salt which I think was too much as the bread came out a little salty. Next time I'll try 1/4 teaspoons instead. Thanks for posting.
