Made this again for another fall buffet. This time I added a bit of lemon zest and cut back a bit on the honey. I then mixed it with sour cream and sweetened cream cheese and piped it into choux puffs (Jessica C's Profiteroles (Choux Puffs)) to make pumpkin profiteroles. Mounded them on a plate and drizzled caramel over all. Sinful little bites that are just too easy to plow through- not a one was left. Thanks Kittencal for this lovely versatile recipe.
Did as the recipe instructs and it turned out just delicious. Real tasty on my English muffins. I didn't find it too much lemon at all. I don't think I have done a recipe of yours Kittencal that I don't like. It made more than 1 cup though as you posted which is great because I don't see it lasting too long. Is it breakfast time yet? April 20,2010 This time doubling the recipe so I could use up the whole can, so it was minus 1 oz. of pumpkin so I just used a tiny less of the honey and molasses and it turned out delicious once again. We really loved this. My fiance and I are both huge fans of pumpkin, and as much as we love pumpkin butter it's hard to find good ones at the store... so when I found this, I knew we had to try it! I made this exactly as written, except that I scaled the recipe to make 1 1/2 cups so I could use up the leftover canned pumpkin that was languishing in our fridge. With its wonderful balance of flavors, I wouldn't change a thing. Thanks, KITTENCAL, for a great pumpkin butter!
This tastes better than pumpkin butter I have purchased in a jar! I wonder if you could do the same with apples or applesauce for apple butter. Hmmm...I think I will try it.
Easy to make. I can not get enough of this stuff. I love it on biscuts. It is great on pancakes.
We really like pumpkin but for me and my family, the lemon was just too overpowering and sort of weird with the pumpkin. My son said "eeeewwww sour pumpkin". In an effort to salvage, I added another cup of pumpkin, more molasses, honey and some pumpkin pie spice and it was OK. Thanks for posting!
Yummy...great as an extra in a gift basket with some muffins and such brought to a brunch party and was a huge hit...made for Healthy Choices Tag Game with Autumn on my mind, but a winner year round...a little dab will do ya... :)
This reminds me alot of the Mennonite cooking and pennsylvania Dutch cooking (Amish and coal counrty Pennsylvania Dutch and yes there is a difference).
I had this on french toast and liked it better than using syrup, I love the molasses flavor, very easy, I will keep this on hand, Thanks Kitten for a great recipe.
