These were outstanding! Served with chopped olives, lettuce, tomato, avocado and sour cream (my husband added Tapatio as he does to most food). These were wonderful! (The only thing I changed was I used a green sauce for one pan.) I made 3 batches - 1 for dinner and 2 to freeze. Served with some red rice - it was a hit! My husband said "this one's a keeper" meaning into the recipe box it goes! Thank you!
First time ever attempting to make homemade enchiladas for my boyfriend and I, and this recipe was amazing, easy to make and turned out delicious! My boyfriend loved them to he thought they were so good, I will definitely be saving this recipe and making them again.
