We really enjoyed this recipe last night with our ground turkey tacos. Don't be intimidated by the long ingredient list--the prep is very fast and the recipe is easy to make. I subbed a red bell pepper for green, as that is what I had on hand. I used a can of black beans, and used frozen corn, which I blanched. I used a 15 oz can of fire roasted tomatoes. I kept all spice proportions as listed and used a little more cilantro, as we love it. The rice was very moist and flavorful. I enjoyed it again today for lunch. I'd definitely make this again. Very good. We had this dish with tuna steaks tonight. I used canned black beans and canned corn as that is what I had on hand. Did not add the green pepper but added the whole can of black beans. Made for Ausie Swap #35. Thanks for posting.

Really good. Used canned beans & frozen corn and extra veggies I had in the fridge (zucchini & carrots). Had to omit the lime & cilantro as I didn't have any. Added some smoked sweet paprika. Added some diced smoked sausage for a very filling meal. Kids loved it & it disappeared quickly.

This is wonderful!! But beware, it does make a large amount of rice, so next time I'd most likely halve the recipe. I only added 1/2 TBSP chili powder, as my chili is very hot. Thank you for posting.

Mmmm, this is divine stuff! I love how all of the flavours compliment each other so well - the complexity of the cumin and cinnamon, the heat of the chilis, and the burst of lime and cilantro - it's a party in my mouth! I used brown rice and a can of black beans, rather than dry. Oh, and I wasn't sure of the size of the canned tomatoes, so I used a 28oz can of diced, which will worked well for me. Wow, the flavors in this come together wonderfully! I omitted the salt (personal preference) and used canned beans, so it moved along quickly. Thanks for sharing!

Yummy and very filling! I did use canned corn and canned beans to save time and went heavy handed on the chili powder, but otherwise made as posted. I'll be keeping this one! Thanks for posting!

Although this recipe was made pretty much as indicated, I did cut back on the amount of chili powder (to 2 teaspoons), the red pepper flakes (to 1/8 teaspoon) & the ground cumin (just slightly)! I also used lemon pepper instead of the S&P! This was outstanding! Very simple to put together, I had to use canned black beans, because of time constraint, cut some fresh corn off the cob, chopped garden tomatoes, and used a fresh Walla onion. I only used 1 tablespoon of olive oil, and kept true to the seasoning, which was just great! I was able to get this together and on the table in about 30 minutes, and the taste was wonderful! Will keep this recipe going on for a long time, thanks Karen! Made for *I Recommend* game 2008.
