Delicious Coconut Rice

"This is my favorite way to make rice. I sometimes add a stick of butter to it although it's not necessary whatsoever. I like to fill my can of coconut milk with water to get the rest of the coconut milk out and use for the water. This went really well with CIlantro Lime Shrimp with Coconut Rice.   • 2 cups jasmine rice
  • 13 12 ounces coconut milk (full fat is better although you can do light versions)
  • 1 12 cups coconut water or 1 1/2 cups water
  • salt, to taste

directions

  • Place jasmine rice in a fine mesh sieve and rinse under cold water until water runs clean. Drain well, it works best to tap base of stove with your hand or against the sink.
  • Heat coconut milk and coconut water in a medium saucepan over medium-high heat. Bring to a boil, season with salt. Add rice and bring to a simmer.
  • Reduce heat to low cover and simmer until water has been absorbed, about 17 to 20 minutes. You may find there's a few small pools of liquid at the top and that's fine.
  • Remove from heat and let rest covered for 15 minutes. Uncover, fluff with a fork and serve warm.
  • Serve with toasted unsweetened coconut, sliced almonds, black beans, fresh mango, fresh pineapple, bell pepper, cilantro, or lime.
