Delicious Chewy Peanut Butter Chocolate Chip Oatmeal Bars

"These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)"

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
  • Add in the peanut butter and beat until combined.
  • Add in eggs and beat until combined.
  • In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
  • Mix in chocolate chips.
  • Transfer and spread into prepared baking dish.
  • Bake for 22-25 minutes or until JUST set (do not overbake).
  • Cool then cut into squares.

  2. Hello, are you referring to oats or oatmeal? Oats would just be the dry oats and oatmeal is a porridge made from oats. Thanks for clarifying :)

  1. Very very good! I cut down on the sugar...3/4 c. of each. Didn't seem to make a difference, still sweet enough! I also used 1/2 cup butter, and 1/2 cup butter flavored crisco. I baked in a 9x13 inch glass pan, and it took about 23 minutes until done. Very good texture and flavor. Thanks Kittencal!
     
  2. Love the recipe. But have made changes --have halved the amount of butter and added one half a cup of lowfat vanilla yogurt to cut the fat. And used some whole wheat flour in place of the white flour, as well as added some ground flaxseed. The yogurt substitution seems to require a longer baking time.
     
  3. WOW! I'm a pretty good baker (ask a friend or neighbor) and these BLEW AWAY my family. Excellent, delicious and perfect directions. Must admit that I layered the dry ingredients in the mixer rather than combining them in a separate bowl ... still came out great!
     
  4. Easy, abundant, and delicious! Next time, I'm going to add a little bit of salt and a nut of some sort, maybe walnuts or almonds for a crunchy element to bring it all together. I'm sure crunchy peanut butter would do the trick, also. I will definitely be making this again. :)

  1. I used half regular pb and half pb with cacao. And I halved the recipe and put it in a smaller pan. It served about 15 happy people. So delicious!
     
  2. See comments...used all quick cook oats and a slightly larger pan, and cooked 30 minutes. They were just right.
     
  3. This was divine. I used only 1/2 cup white sugar instead of one and only 1 cup chocolate chips instead of two. I found it to be plenty sweet and chocolaty enough. I used a 9x13 glass baking dish and I had to bake it for an extra 10 minutes for it to set up.
     
  4. These came out fabulous! I used Dark Chocolate Dreams peanut butter and added 1/4c of cocoa powder just to up the chocolate factor. I also subbed 1/2 c of M&Ms I wanted to get rid of for some of the chocolate chips. The texture of these is fantastic. I'm making them again for a family BBQ on Saturday at my boyfriend's request!
