- 297.66 g can condensed chicken broth
- 510.29 g jar apricot preserves
- 1 large onion, chopped
- 29.58 ml Dijon mustard
- 1814.36 g boneless pork loin roast
directions
- Mix broth, preserves, onion and mustard in slow cooker.
- Add pork and turn to coat.
- Cover and cook on low 8-9 hours or until done.
- Is good served with steamed broccoli and carrots, baked potato and warm dinner rolls.

I used 1.8lbs of boneless pork loin pieces (ended up being 6 porkchops basically). Threw it all in the crockpot on low for 4 hours, and it was done. Added about 2 tbls of cornstarch to thicken up the gravy at the end. Served with homemade rolls and red potato mashed potatoes with most of the skins removed. Mmmmm!

We were really happy with the way this recipe turned out. Did make a few changes...used homemade peach jam and left out the broth. I also poked holes in the roast and put it in the crockpot on high for about 5 hours. I then strained the juice and reduced it by about half and added 1 Tbsp. butter to use as a sauce to serve. We all loved it and can't wait to use the leftovers!

The sauce is a great match for pork. I did add a pinch of ground cloves; that was a perfect addition with the sweet ness of the preserves and the mustard flavor. Since I noticed that the sauce was very thin, during the last hour of cooking, I took out about 1/2 cup of sauce, dissolved some cornstarch in it and added it back to the crockpot. That thickened the sauce up wonderfully. Thanx for a lovely pork recipe. I'll use this again with my little adaptations.

I rescue wolves and have 4 of my own...my big ole furbabies. I've placed appx 30 wolves in wonderful forever homes.
Hobbies include cooking/baking, reading, gardening, writing poetry and short stories, and collecting angels, lighthouses and teapots...just to name a few. One of my passions is doing my part to take care of our natural environment and one of my pet peeves...hmm...that's a tough one...ok, 2 of my pet peeves are people who litter and people who talk loudly on cell phones while eating in a restaurant or shopping in supermarkets (give us a break, folks...at least lower your voices!).
I love trying new recipes and meeting people. I'm a real nature nut and adore animals, having had some very "unique" pets. I love camping, fishing and picnics. I lived in Texas for 25 yrs but have recently moved back to my hometown in Oklahoma to be near Mom. She's elderly and her health isn't good, so it was time. Through the grace of God Mom and I are now neighbors! It broke my heart to leave my two girls and their families on the coast in Texas although knowing I'm where I need to be at this time makes the transition easier. Am very much looking forward to making lots and lots of new friends here at Zaar!
