Delicious and Healthy Chocolate Pudding

  • Lightly beat egg whites in a small bowl.
  • In a large bowl, mix together cocoa and cornstarch.
  • Add 3/4 cups of the milk and whisk mixture until it's smooth.
  • In a large saucepan, mix together the rest of the milk, the Splenda and the salt.
  • Bring to a boil over high heat, whisking continuously.
  • Remove from heat.
  • Whisk the cocoa mixture into the milk mixture.
  • Bring to a boil over medium-high heat.
  • Boil for 2 minutes while whisking continuously.
  • Remove from heat.
  • Slowly whisk 1 cup of the hot cocoa mixture into the egg whites.
  • Pour this mixture back into the pan and cook over medium-high heat, whisking continuously.
  • and being careful not to allow the mixture to boil.
  • Remove from heat.
  • Add vanilla.
  • Mix well.
  • Pour into 4 serving dishes.
  • Cool to room temperature.
  • Cover with waxed paper that has been cut to fit the serving dishes (this prevents the pudding from getting a skin).
  • Refrigerate for 1 hour.
  • Garnish with berries, mint leaves and cocoa.

  1. UPDATE: first time I used splenda This time I used sugar and some orange extract it was PERFECT - Thank you I have give to some people diabetics as they don't have many treats. Thanks You OOps have to change star rating too - sorry for inconvenience if it happens to anyone. When I used Splenda I may have goofed and not halved the cocoa as I did the other ingredients. So I erased that info and upped the stars to give this recipe the credit it deserves. One of my friends says she is going to make it with Raspberry extract added. Oh that sounds good think I will go buy some more extract.

  3. Very easy recipe and it tastes delicious. I decided to substitute the unsweetened cocoa with ghiradelli's hot chocolate mix and went easy on the sugar because the mix includes sugar. The results were delicious and it gives me the chance to get rid of the many containers of hot chocolate mix that I have hanging around.
     
  4. So good! Made it with raw cocoa powder and coconut sugar. Enjoyed that it wasn't super sweet. Family loved it for the dark chocolate flavor. Topped with berries, cocoa nibs and a little bit of whipped cream, this was WONDERFUL!!!!
     
  5. Like another reviewer, I thought 2/3 c cocoa was too much. I used 1/2 c and that was too much. Pudding was good but a little bitter. Next time, I will try 1/3 c cocoa. Also, I used a whole egg rather than 2 whites. Be sure to use a large pot. Although the volume of ingredients is not that much, when it starts to boil, it sort of explodes. This is definitely a keeper recipe with these changes.
