Delicious and Healthier French Fries

"I developed this to feed my finicky toddler who subsists on nothing but crackers and fries right now. With the addition of Wheat Germ, he also gets some extra vitamins in his fries and it lends a wonderful, roasted flavor to them!"

  • Preheat oven to 400 degrees. Scrub potato, peel (optional), and cut it into 1/4 inch pieces so it resembles shoestring french fries. Soak pieces in a bowl of cold water for 10 minutes. Dry the potatoes with paper towels. Coat with olive oil, then dust with wheat germ and sea salt. Place potatoes in a single layer on a cookie sheet and cook for 15 minutes. Remove from oven and reduce heat to 350. Flip potatoes and continue cooking for 15 minutes or until fries are golden brown and crisp.

  1. I love the concept but sadly this just didn't work so well for me in practice. I followed the recipe right down the line and they did bake but the fries were soft and limp. I was expecting them to have at lease a firm if not rather crunchy exterior from the coating but the bran was still the same texture as when I coated the spuds. I'm sorry, I was prepared to love this recipe but it just didn't happen. Perhaps I should have just left them in the oven for another 10 mins but the rest of dinner ready to go so I just didn't have that extra time.
