    Ingredients:

    Crust

    Filling

    • 3 egg yolks, beaten
    • 1/2 cup cream
    • 2 tablespoons flour
    • 1 1/4 cups sugar
    • 1/8 teaspoon salt
    • 1/2 cup frozen orange juice
    • 2 1/2 cups diced rhubarb

    Meringue

    Directions:

    1. 1
      Mix crust ingredients together and press into a greased 8x8" pan. Bake at 350 for 20 minutes.
    2. 2
      Mix filling ingredients together and pour over baked crust. Bake another 20-30 minutes or until thick and set.
    3. 3
      Mix meringue ingredients and whip until stiff peaks form. Spread over top of filling layer. Bake just until peaks are golden.
