Very easy and QUICK. I used coriander (cilantro) paste because every store I went to was out of the fresh stuff. And you will need TWO tomatoes for this recipe. I'm always looking for a way to use up leftover chicken and the rest of the ingredients are things that I keep in the cupboard. Thanks for a fantastic recipe.

I have been making this at least once every 2 weeks for over a year now! One of my husband's favorites, and only 5 Weight Watchers Points Plus when using all fat free (Cheese, Tortillas and Refried Beans). So easy and quick for our busy family, and I've even added a small can of green chilis, and chopped green onion to the mixture. Thank you for such a pleasing, filling and healthy recipe!
