Delcies Cake

"Many years ago, my Aunt Delcie who lived in Jackson KY would always make this cake in an iron skillet and turn onto a plate. We would break pieces off to eat. I ask her for her recipe, but she did not measure anything. So one day I watched her and wrote down the ingredients. No frosting was needed."

ingredients

• 2 egg yolks
• 354.88 ml milk
• 591.47 ml sugar
• 473.18 ml all-purpose flour
• 4.92 ml baking powder
• 157.80 ml Crisco shortening (she used lard)
• 9.85 ml lemon extract
• 2 egg whites
• 0.25 ml salt

directions

1. Beat together in order given. Except egg whites and salt.
2. Be careful with the milk.
3. She added it to make it wet.
4. Beat egg whites and salt together, fold in to above mixture.
5. Bake 45 minutes at 350.
