I made this up for hot days.
- 4 cups chopped lettuce
- 3 stalks chopped asparagus
- 1⁄2 cup sliced mushrooms
- 1 cubed avocado
- 1⁄3 cup marinated artichoke hearts
- 1 cup chopped cooked chicken breast
- 1⁄4 cup blue cheese
- Mix together.
Very good salad, perfect for warm summer evenings. Even the colors are cool and soothing, just white and green. I served with dressing of choice; DH had ranch and I had Italian.
This was a delicious and easy salad. I left out the asparagus and it was still tasty and so flavorful!
This is a really great salad! I use artichokes marinated in water and just use that as a dressing to keep down the fat and calories. Thanks for the great recipe!
