If you like sun dried tomatoes and feta cheese, then you will love this version of potato salad.
- 5 medium red potatoes, unpeeled & cubed
- 1⁄4 vidalia onion, finely chopped
- 4 sweet gherkins, chopped
- 2 hard-boiled eggs, chopped
- 2 tablespoons crumbled feta cheese
- 4 sun-dried tomatoes, chopped
- 1 cup mayonnaise
- 1⁄4 cup sour cream
- salt and pepper

- Boil the potatoes for 10 mins or until tender ( do not overcook )Drain and cool.
- mix the mayonnaise and sour cream in a large bowl.
- Add all the other ingredients and stir gently to mix.
- season with salt and pepper.
- Refrigerate for an hour before serving.
