  • In a large mixing bowl, mix the oil and sugar.
  • Add remaining ingredients and mix well.
  • Pour into 2 greased 9x5 loaf pans and bake 55-60 minute in a 375 oven.
  • Cool on racks.
  • This recipe is also great for mini muffins and regular size muffins.

I have lived for the past 25 yrs. in Ohio for the first 25 I lived in North Carolina. I work at a drug and alcohol rehab for women, I was the cook for 5 years but now I work midnights. My favorite cookbooks are the Taste of Home annual editions and any of the Southern Living cookbooks. I love to crochet in my spare time in the winter and I do counted cross-stitch in the summer.
