Day-Before Mashed Potatoes

  1. Bring a pot of salted water to a boil. Drop in potatoes. Cook until tender but firm, about 15 minutes.
  2. Transfer potatoes to a large bowl and mash unil smooth. Mix in remaining ingredients. Cover and refrigerate 8 hours or overnight.
  3. To warm, preheat oven to 350f. Lightly grease a medium baking dish. Spread mixture into dish; bake about 30 minutes.
  4. Garnish with chives if you like.

I love these! I also dice a onion and mix in while mashing. I make these for every family get together. Huge hit!

Have made these for years. Great when company's coming or to take along dish. I warm mine in the slow cooker for about 2 hours on low. Save space in oven when cooking your main dish
