Day-Before Mashed Potatoes

- 9 potatoes, peeled and cubed
- 6 ounces cream cheese
- 1 cup sour cream
- 2 teaspoons onion powder
- 1 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 2 tablespoons butter
directions
- Bring a pot of salted water to a boil. Drop in potatoes. Cook until tender but firm, about 15 minutes.
- Transfer potatoes to a large bowl and mash unil smooth. Mix in remaining ingredients. Cover and refrigerate 8 hours or overnight.
- To warm, preheat oven to 350f. Lightly grease a medium baking dish. Spread mixture into dish; bake about 30 minutes.
- Garnish with chives if you like.

I've been using a recipe *very* similar to this one for the last couple of years during the holidays. The only differences between the two recipes are that the other one I found uses 8oz of cream cheese and 1 tsp of black pepper instead. Potatoes done this way are so awesome and I have gotten my inlaws hooked on this recipe as well. I really like that they can be put together the day before and you only have to heat them before serving. One caution I would have for anyone making this is that your oven may need more than 30 minutes to reheat them - in one oven it only took me 30, but this past year in a different oven they needed a little longer to be fully reheated. They're also really good even if you don't let them sit overnight beforehand. Thanks so much for posting this...I agree, they're delish and I highly recommend them to everyone!
