This is a wonderful spread to serve guests. Travels well once it has been chilled in the refrigerator.
- 1⁄4 cup pineapple juice
- 1⁄2 orange pulp
- 1⁄2 cup nuts
- 3⁄4 cup pitted dates
- In a blender or food processor combine the pineapple juice and pulp from 1/2 an orange. Cover and blend on high speed for 5-10 seconds to combine.
- Add nuts and pitted dates to blender. Mix on high speed for 30 seconds, stirring down mixture when necessary.
- Transfer to serving dish and chill.
So far, this is good on apple slices and English muffins. :) Easy to make, too! Reviewed for Healthy Choices ABC tag game.
I doubled this recipe & used the more moist, chewy Medjool dates along with cashews & made AN EXTREMELY TASTY SPREAD that we enjoyed on both toasted English muffins as well as on a flavorful & heavy whole wheat bread!
