This is a really old recipe of my mother's. It goes very well with your morning coffee break.
- 1 cup dates, chopped fine
- 3⁄4 cup brown sugar
- 1⁄4 cup butter
- 3⁄4 cup boiling water
- 1 egg, well beaten
- 1 teaspoon baking soda
- 1 3⁄4 cups flour
- 1 teaspoon salt
- 1⁄2 cup chopped nuts
- Mix well in a bowl the dates, brown sugar, butter and boiling water.
- Stir until butter melts.
- Stir in the egg, baking soda, flour, salt and nuts.
- Place in a buttered loaf pan (9x5) and bake at 350° for about 1 hour, or until a knife inserted in the middle comes out clean.
Good, but would have been better with some spices like nutmeg and ginger maybe. But, good.
Very easy to prepare - wonderful outcome! I added a splash of vanilla, bit of grated lemon zest and a good grating of nutmeg because I like those flavors, I used nuts I had on hand, some almonds and Brazil nuts. Also used nice Medjool Dates that I pitted and chopped myself with a little flour to fend off the stickiness. THANKS!
