This was one of my mother's best recipes. One year at Christmas, I bought a few decorative loaf pans and baked the bread in it. I enclosed the recipe when I wrapped it and gave the bread in pan as a gift.

  1. Pour boiling water over chopped dates and set aside.
  2. Cream sugar and melted butter together.
  3. Add egg and salt to butter/sugar mixture.
  4. Sift together flour and baking soda.
  5. Add flour mixture alternately with water drained from dates to the creamed mixture.
  6. Fold in vanilla, nuts and dates.
  7. Turn into a large greased loaf pan.
  8. Bake at 350 for 1 hour.

Photo may be seen here in Autumn gallery: www,annacia.com. If I were going rate on taste alone this would surely be a 5 star recipe. However, I must say that with using baking soda alone it came out very dense and heavy and rose very little and I think this would benefit by adding some baking powder . I also found the timing to be off by a fair amount. I'm glad that I checked it at 45 mins as the tooth pick came out clean as a whistle (it might have been baked at 40 mins). Made for PAC, Fall 2012.
