This was one of my mother's best recipes. One year at Christmas, I bought a few decorative loaf pans and baked the bread in it. I enclosed the recipe when I wrapped it and gave the bread in pan as a gift.

However, I must say that with using baking soda alone it came out very dense and heavy and rose very little and I think this would benefit by adding some baking powder . I also found the timing to be off by a fair amount. I'm glad that I checked it at 45 mins as the tooth pick came out clean as a whistle (it might have been baked at 40 mins). Made for PAC, Fall 2012.
- 2 cups dates, stoned and quartered
- 1 1⁄2 cups water, boiling
- 1 cup sugar
- 1 tablespoon butter, melted
- 1 egg, beaten
- 1⁄2 teaspoon salt
- 2 3⁄4 cups flour
- 2 teaspoons baking soda
- 1 tablespoon vanilla
- 1 cup walnuts, chopped
Directions See How It's Made
- Pour boiling water over chopped dates and set aside.
- Cream sugar and melted butter together.
- Add egg and salt to butter/sugar mixture.
- Sift together flour and baking soda.
- Add flour mixture alternately with water drained from dates to the creamed mixture.
- Fold in vanilla, nuts and dates.
- Turn into a large greased loaf pan.
- Bake at 350 for 1 hour.
