This is a family recipe but I am not sure where it came from. I love dates, so this is a favorite of mine for holidays (and it is easy).
- 2 eggs
- 1⁄2 cup flour
- 1 cup chopped dates
- 1 cup chopped walnuts
- 1 teaspoon baking powder
- 1 cup brown sugar
- 1 teaspoon vanilla
- 1⁄2 cup confectioners' sugar (approx.)
- Mix all ingredients.
- Bake in greased layer cake pans or square pans at 375 degrees for 35 minutes.
- Cool for 15 minutes.
- Slice into squares and roll bars in confectioner's sugar so they don't stick together when stored.
Perfect for the date lover! I used a 9x9 square pan and patted the thick dough into it. I was wondering how they would turn out without any butter or shortening but they were great. Nice and chewy and something like a cross between a bar cookie and a candy. I can't wait to share them with my grandmother!
I've looked fr this or a similar recipe for over 20 years this is the ONE my Great Aunt made. (if memory taste is correct, or very very close) Thank you Thank you Thank you
