I found this hidden gem of a recipe in a library book several years ago. It is always the first to go in my Christmas goody baskets.
- 1 egg, well-beaten
- 118.29 ml margarine
- 236.59 ml sugar
- 226.79 g pitted dates, chopped
- 236.59 ml pecans, finely chopped
- 591.47 ml Rice Krispies
- 4.92 ml vanilla
- In electric skillet set at 300 degrees (or heavy pan over low heat), cook butter, sugar, dates and egg until gooey and thickened.
- Add pecans and vanilla.
- Then add Rice Krispies.
- Mix well.
- Cool until slightly warm.
- Form into balls & roll in powdered sugar.
- Makes 50-60 small balls.
I used this recipe in a local 4-H Club meeting to teach the kids (ages 8 to 14) how to make simple holiday treats. With only a stove top, it makes it possible for kids to make without a lot of worry or assistance from a parent. I only wish I had remembered to use a bit of butter on the palms of our hands when turning the blob of mix into a ball, it might have been easier for the kids to make. It was a bit messy but fun and they were all able to master making the date mixture into balls. Very simple recipe and seems just like the recipe my grandmother used to make.
Really?? I lost my mom's recipe so was excited to find this 5 star one. BUT it is not forming balls!! Not staying together. Another recipe I looked at had the sugar and butter quantities exactly opposite!! Is there an error here?? Have to throw it all out!! Not happy!
I've been making these for years, but with no egg or vanilla. They are sooo good, and a tradition in our family.
